Eastern suckling pig
     
 

Lechón oriental (Eastern suckling pig) is a delicious dish introduced by the Jesuit missions that were established in eastern Bolivia. It became merged with local ingredients as it evolved.

Serve with cassava (manioc), eastern salad, fried banana and rice.

Eastern salad is prepared with green papaya, green onion, pepper and guineos (small, local banana).

Recipe 

Ingredients

- 3 kg pork (suckling pig)

- lemon, parsley, pepper, thyme, garlic, cumin, salt

- 2 chopped onions

- 1 cup vinegar

- 50 ml oil

Preparation

- Spread lemon juice over the pork

- Make a sauce with the parsley, pepper, thyme, garlic, cumin, salt and oil.

- Marinate the meat with the sauce and place in a slow oven for 60 to 90 minutes
