Ingredients:
1 hog head
1 sprig parsley
3 white onions
1 cabbage
6 peeled potatoes
2 cups chuño (freeze dried potatoes)
1½ cups rice
Oil
Salt
Crushed garlic
pepper
Cumin
yellow chili powder (Ají chili)
Preparation
- Chop and fry onions until transparent
- Boil hog head in salted water
- Add one fried onion, cabbage and parsley
- Cook rice in salted water
- Cook potatoes in salted water
- Cook chuño in salted water
- Make a sauce with the other 2 fried onions, yellow chili powder, garlic, salt, cumin and pepper
- Serve the hog head covered with sauce accompanied by cabbage, potatoes and rice.
