Locro potosino (Hearty pumpkin stew from Potosí)
     
 

Besides being delicious, this dish has very nutritious since it is made with vegetables, legumes and grains.

Recipe

Ingredients

- 1.5 kg ripe pumpkin, peeled and cut in small pieces

- 3/4 cups oil

- 1 finely minced onion

- 2 garlic cloves, ground

- 1 tablespoon oregano

- 3/4 cup peas

- 3 potatoes, peeled and cut in small pieces

- 10 ears of corn cut in rounds

- 3/4 cup cheese cut in small pieces

- salt, black pepper, parsley

Preparation

Bring 2 liters of water to boil. When it begins to boil, add all ingredients and boil for about 20 minutes.

Variant

Driver's Locro (Eastern)

- 500 gr beef cut into small pieces

- 1 yucca (cassava) and 2 potatoes cut into small pieces

- 1 chopped onion

- oil

- 250 gr rice

- oregano, salt and pepper
